Affordable Cake Recipes


With the development of cake mixes and ready made frosting, even the most inexperienced baker can make affordable cakes. Using a cake mix and adding other ingredients makes for some delicious cakes.
One very good cake is a Pina Colada Cake. Using 1 box of Supermoist yellow cake mix, 1 8oz. can of crushed pineapple, undrained, 3/4 cup water, 1/3 cup vegetable oil, 2 eggs, 2 teaspoons rum extract, 1 12oz. can prepared white frosting and 1/4 cup flaked toasted coconut.

Heat the oven to 350 degrees and grease and flour the bottom of a 9x13" cake pan. In a large bowl beat the cake mix, water, oil, eggs, and 1 teaspoon of the rum extract with an electric mixer for 2 minutes on low, scraping the bowl frequently. Do not over beat. Scrape the batter into the pan and bake as directed on the box. Cool on a cooling rack, after adding the remaining rum extract to the frosting, frost the cake and sprinkle the top with the coconut.

If you like to make cakes from scratch here is a recipe which is very affordable and easy for the most inexperienced bakers. For Orange Cake, you will need 1 whole orange, 3/4 cup of melted butter or margarine, 3 eggs, 1 cup sugar, 1 1/2 cups flour and 3/4 teaspoon baking powder. Preheat the oven to 350 degrees. Cut the orange in quarters remove any seeds, put in the food processor, add the remaining ingredients and process until smooth. Turn into a greased and floured tube pan and bake 1/2 hour. Make a frosting glaze using powdered sugar, orange juice and a bit of vanilla. The less ingredients used, the more affordable the cake.
